Responsibilities

The Grille Manager is responsible for assisting with day to day Bistro operations including, but not limited to, basic food preparation, greeting customers, taking customers’ orders, facilitating customers’ payments, washing dishes, serving food, bussing tables, and cleaning the kitchen, checkout and eating areas. This individual takes pride in delighting customers with delicious food and world class service.

  • Provide a high level of customer service by greeting customers entering the Bistro and ensuring they are satisfied with their experience.
  • Work closely with the Chef de Cuisine to keep customers satisfied with food and dining programs.
  • Assist in ensuring the kitchen is kept in a clean, safe, and sanitary condition at all times.
  • Responsible for interviewing, hiring, training, developing, and evaluating assigned staff.
  • Maintain monthly and annual budgets for the Food & Beverage Services department, including producing written documentation of monthly spend on food, supplies, and labor.
  • Maintain the appropriate inventory of kitchen supplies, small wares and table ware.
  • Ensure that all food is prepared, stored, and served according to Company standards and legal requirements.
  • Meet regularly with residents and family members to confirm that high satisfaction levels are maintained.
  • Work with staff to ensure that they have a clear understanding of how to provide high levels of customer service at all times.
  • Confirm that the front of house and back of house staff work closely together to deliver a food product that exceeds the residents’ and/or guests’ expectations.
  • Work with the Food and Beverage Director and front-line staff to obtain and maintain department customer satisfaction and department of health survey levels at or above designated scores.
  • Maintain employee satisfaction scores at or above designated scores.
  • Delegate tasks to all staff so that the kitchen and restaurant areas are maintained at the highest levels of cleanliness and quality at all times.
  • Adhere to Quality Enhancement standards and standard food safety practices.
  • Clean and sanitize carpets, tables, chairs, condiment containers, and equipment used in the eating area.
  • Keep kitchen floors clean (sweep and mop) and trash emptied.
  • Wash and store all dishes and equipment in accordance with policy and procedures.
  • Ensure that all food is received, stored, and prepared according to Company standards.
  • Assist with the preparation and presentation of meals and snacks in accordance with Company standards.
  • Adhere to cleaning schedules as assigned.
  • Adhere to standard food safety practices.
  • Assist with preparation and execution of special events, banquets, and theme meals.
  • Complete food deliveries both within the building and nearby locations as needed.
  • May perform other duties as needed and/or assigned.
Qualifications
  • Basic reading and writing skills.
  • Proficient mathematical skills required to add, subtract, and divide accurately.
  • Strong verbal communication skills.
  • Experience working in food service preferred.
  • Serve Safe Certification preferred.
  • Knowledge of local and state health and sanitation and safety codes preferred.
